I cooked 9 racks of ribs today for a friends party and I decided to also make some ABT's. I mixed a 3 pepper colby jack cheese and parmesan with the cream cheese. I had some cheese left over so I went to the garden and got a pablano pepper and made a super ABT with 3 little smokies. They were better than the japs and a bigger hit. Had a little more zip and great flavor. Any one out tried that before?

No I haven't but it sounds good and I'll be sure to try it when my poblanos start to ripen. I also plan on loading up some habaneros with cheese and little smokies when they start coming in later this Summer.

When do you pick your pablanos? I have a bunch that look ready, just want to make sure.

Pete, sounds great but I never heard of a poblano with mure heat than a jalapeno.

Chef, you'll love the habenero ABT. You'll only need a couple...like the ABT from hell...

I pick them when they look ready. I am new to gardening so what do I know.
