    Has anyone ever tried smoking a butt that was marinated in soy sauce type brine? I’m not sure how the smoke and soy would marry up.

    From Western North Carolina I have smoked chicken and soy but not pork. The chicken turned out fine though

      It will work, but, you want to take care that you don't get it too hot, as the soy will burn on the outside and turn bitter. In addition, it has a bunch of salt in it, and that will concentrate as the liquid evaporates out, so keep the salt level down when seasoning.
      Once you go Weber....you never call customer service....

        Just mind your brine & salt level gig...yeah i've jacked Soy Sauce in me brine...get after it...

          I've seen brine recipes which use Soy Sauce and tried a few. Generally with Poultry. I had one written down that was an "all in one" brine....you brined in it and then poached in it. Wasn't bad at all and now....I can't find the damn thing.

          But hey, I've even seen Europeans (Poland) dipping meat in blood before they smoke it.

            As others have said watch for the salt concentration. I myself have switched to low sodium tamari to get the soy flavor w/o the salt in me marinades. I find it has a richer taste, and no gluten. I mention no gluten because it seems every woman I know right now doesn't eat gluten.

              Soy sauce is the main ingredient of the 1000s of pounds of jerky I have made over the years. Beef, venison, elk, caribou, pork, turkey, duck, goose, black bear.... It will work. watch your additional salt.
