    testing the smoke in the link-o-nator.............
    good day for it temp wise...


    2# of cheddar and 2# of pepper jack....


    i'l run them for 3 hours and then seal them for a week......

    Can't read the temp But it looks like the cheese is coming right along, love me some smoked pepper jack

      84 when i took this pic.......good thing i was using the maverick cuz while i was inside i noticed the temp piked cuz the sun came around the roof line so i pushed it back in the shade.

            Nice! What are you using for smoke?
            I wait 4 weeks before I slice, I like the real mellow flavor. That's just me though.

                pecan/maple pellets......vac sealed and i'll let them wait.......yea riiiiight! i took a slice of the pepper jack and put it on top of some boxed jalapeno scalloped potatoes........good chit Maynard!

                  Right on Rob...
                  Resting cheese is only important if ya are gonna eat it straight up...Like with crackers...If adding to food that's cooked its no big deal...
