  • Christmas seafood dinner!

    The family wanted a relatively light meal for Christmas. Seafood was the theme. I showed up for dinner (dressed to impress) only to find out that my sister & brother in law wanted me to "man the grill"! I vehemently protested at first, but soon obliged them.

    The property next door had a "mini Pecan Grove". I found some small green branches that I used for smoke. The entire cook took about an hour and a half. The fish was Tilapia and the smoke really improved the flavor of this normally plain tasting fish. Merry Christmas everyone!

    Nice work! Those "Outbacks" are a bit of a challenge to use. Ya done good!

              Excellent cook, I love seafood!
              Your nightcap looks mighty fine too. I'm a light weight when it comes to drinking but I'd like a sip of that Stagg Bourbon. Looks SO good!

                Thanks Mark! I'd forgotten that he even had it! :) You have to press down real hard to make sure it's closed!

                          Thanks Jeanie aka Mama! Lol This particular bottle of Stagg Jr is very strong! You're welcome to some but I'd suggest a lot of ice on your glass! It's pretty Stout! :)

                            Yea and the airflow isn't great either. Got one I modded for finishing chicken in comps. Bout the only thing they good for. AN don do ABT's on it. They fall through the spaces in the grill!

                              Haha! Interesting! Lucky for me it's not my grill! The air grate was fully opened and I guess it was facing the wind. 4 Hours later it was still going strong!
