  • Sous Vide - Oh yeah!

    Got an Anova Precision Sous Vide for Xmas, another tool in the cooking arsenal. I started playing with it and have done several simple items now. I started with some veggies, sweet potatoes, squash and zucchini. The veggies came out good but I think I will still roast, bake, fry, whatever. Then I did some pork cutlets straight from the fridge vacuum packed, no seasoning. Finished them on the grill for a sear, splashed with balsamic and topped with mango salsa. They were good, next time I will season them first, the chops themselves were perfectly done and amazingly moist, just needed seasoning. Next up, some orange roughy. Into the bag with some butter, parsley, Bay's seasoning, garlic powder and two thin slices of lemon. Yep, I was getting more experimental and WOW! The fish was absolutely amazing, moist, flaky and full of flavor, definitely great! Yesterday it was steaks, ribeyes with Tatonka dust, finished on the Weber and topped with some roasted garlic steak butter. To be honest, I can get the same flavor without the sous vide but the moisture, the perfect doneness, the simplicity of it all can't be beat. I watched the game while the steaks cooked.           Nice cook! And yes... SV has it's place for sure. Like any method of cooking. But it has some advantages over most methods. Time being the huge one. It almost don't matter. that steak'll be med rare whenever ya get around to it

            What Rich is saying is that you have no cooking skills. The steak is going to come out beautiful no matter what.

            Serious, SV give you many more options to play with seasonings, texture, cuts of meat, etc.

              Cooking skills? I have no cooking skills... just a fair amount of luck mixed with tons of enthusiasm!

                  So true though, with all this technology it's hard for anyone to screw up. I'm no youngster so I remember charcoal and sticks controlled with watchful eyes and dampers, not electronic gadgetry. Now we have PIDs, Mavericks, Tappecues, Sous Vide, all kinds of stuff. My take on it is this ..... all this stuff helps an average cook put out great food by eliminating the error, but it also helps a good cook by allowing them to concentrate on flavor profiles, new methods and the like by eliminating that need to tend the fires. Of course, there is many a weekend my stress relief is back to basics, tending the fire, relaxing by the cooker in a chair, nice beverage of choice and reaping (eating) the fruits of my labor. All the technology is fun and makes it easy but there is nothing more relaxing than doing something you love. I'm more relaxed on Monday after busting my butt all day Sunday tending to cookers than I am if I had just sat around doing nothing.

                          Yep SV is another great tool, great post.

                          and I totall agree,
                          there is nothing more relaxing than doing something you love. I'm more relaxed on Monday after busting my butt all day Sunday tending to cookers than I am if I had just sat around doing nothing.
