  • 64 degrees and cloudy

    I always smoke some gouda and cheddar, and something random. This time the third cheese is pepper jack. That's just got to be good.

    The cheddar is a two year old white. I tried some of it before it went in the smoker and I loved it already. Can't wait to try it smoked!!!

    I'm going for a three week vac seal. I still have a couple packages in the fridge from my last smoke, so the wait won't be bad at all, cheese-wise.

              Thanks for the comments! I'm kinda glad I have three weeks until this batch of cheese is ready. I need at least that long to come up with some applications.

              Right now all I've got is a box of Ritz and a six pack of beer.

              I'm thinking there's probably other things cheese could be used for.
