I didn't know quite where to put this as this is some wild game, some not. Made these up this morning with About 2 pounds of ground buffalo, 1 1/2 pounds ground elk and 1 pound of my homemade bulk Polish sausage. Flattened out each ball and inserted a cube of Muenster cheese in each one, rolled in my special rub, wrapped in bacon then smoked at about 240 to an internal of 155. Poured my homemade BBQ sauce over and smoked to 160 degrees. Pretty darn good stuff!
