  • Greek Shrimp w/Seasoned Orzo Dinner

I made one of Pam's favorite dinners tonight.
I posted the full cook in this thread last time I made it.

    http://www.smoked-meat.com/forum/showthread.php?t=35644

Not as many pics this time.

EVO, garlic, diced tomatoes, bay leaf, oregano, CRP, FCBP, sea salt, white wine and tomato paste brought to a boil then reduced the heat and let in cook down and thicken.
while this is cooking I have a pot of Orzo cooking

Lay shrimp(I used black tiger prawns this time) on top of thickened sauce, cover and let cook

    Almost done

Now turn off heat. Cover top of shrimp with crumpled Feta cheese sprinkled with a little parsley and oregano. Now put the lid back on and let the cheese melt from the heat of the sauce before serving

Greek shrimp served on a bed of seasoned Orzo.

It looks like a mess, but it is soooo good.

    Thanks for lookin'.

Not needed when covered. Another thing is to only cook the shrimp about half way done before turning off the heat and adding the cheese to melt. Other wise the shrimp will be over cooked and tough by the time the cheese is melted.
