Leftover Lasagna Fatty = Good Stuffing for Peppers

Whether jalapenos or sweet peppers...we have really been liking stuffed peppers lately! I had a little of my lasagna fatty leftover and chopped it up, mixed with cream cheese and then filled some sweet peppers with it. Yum!!! Also had a smoked chuck roast seasoned with Lawry's and pepper, and a hash brown casserole I baked in my Dutch oven. Great supper at the farm!

It's amazing how fast the forest greened up this Spring. Can't see very far at all now but it's beautiful and we always hate leaving.

I want to go to the farm Becky! it is so freaking beautiful - one of the things I remember from our trip to Churchill Downs, was how green everything is in Kentucky - It is really one of the most beautiful places I have ever been. How far is the farm from your home in the city?

I love the leftover fattie stuffed into peppers, that's brilliant!! The chuckie looks moist and juicy, the hash? forget about it... my bueno señora!!

It is CRAZY green right now and that means lots of mowing. It takes us about an hour and a half to get there from where we live in town.
