Seeing T-H's Chicken & Sun Dried Tomatoe sausage inspired me to try something like it. I went to the store for Sun Dried Tomatoes & got Red Peppers instead, I guess I wasn't thinking correctly that day (or many other days).... Anywho, used 2 breasts and about 2# of thighs with some fat, but No skin..... sauted some white onions till they got a little soft, Roasted a Red Pepper, peeled & diced super small, added Basil, Lemon Zest & juice of 1 lemon, 1 large cove of Garlic through a press & Kosher Salt. Mixed it all up & into Hog casings. I did a pan fry test & then added some Salt. Grilled a test one up & the rest went into the freezer. It was Really Good & Juicy too. Thanks for the inspiration & guidance from all here, especially T-H & Richtee.

Nice looking sausage scott great job one thing i will reccomend is not leave it in the freezer to long the ones i made i lost one pack in the freezer for about 4 months and when i pulled and cooked it it did not taste the same it was not good at all for some reason dont think it was freezer burn they was vacume packed
are you headed up this way for silvers this year you know your always welcome to come up and fish with me on my boat and have some smoked goodies it would be fun to get together and catch a few fish let me know

Thanks Huey, not sure what the rest of the summer holds in store yet, but would like to fish the derby, like we did last year. I here what you are saying about freezing too long, I think I will start looking for "homes" for the frozen stuff, to let some friends try it out...... I have kinda gone sausage making crazy lately..... I have some JERK seasoning I made up a while back & may be doing some JERK sausage..... I got everything I need & it is not frozen tonight, I just gotta get motivated..... Huey, last time through Hoquiam, I saw a place that advertised RAZOR CLAM sausage...... Anyone ever try that?sigpic

Never heard of that type of sausage... But then again clams are not that popular down this way unless your in a nicer restaurant...Ken

I stopped in one day and bought a razor clam bratwurst at that place and they did not put enough razor clams in the sausage to make it have any flavor it was basically just brat seasoning with some ground razor clam mixed in it might have been better if they used canned clams for more flavor i thought about making them myself i just cant bring myself to do that to a razor clam they are so good friedLast edited by salmonclubber; 08-19-2009, 07:29 AM.
