  • Stuffed Loin

Here is a loin I stuffed a few months back.

    Onions
    Asparagus
    Yellow & Orange Bells
    Spinach
    Feta Cheese
    Mushrooms

Trussed with a little CBP and Salt..Ready to be kissed with a little Pecan..

4.5 hours later... Off the smoker and resting..

    Sliced...

Served with wild rice (Thanks Erain for the contact info for the rice) My Black Eye Peas. And a smooth 12 oz. of Pumpkin Ale...

This was some fine eats guys..

Looks beautiful, Ken. How did the asparagus turn out, was it tender or crunchy?

It was just a little past al dente. closer to soft.
