  • honey slathered cheese

    tried something new last weekend. I usually use a 2 lb cheese block and cut it lengthwise both ways and across the middle to give me 8 cubes about the size of a butter cube. It gets even smoke and slices fit most crackers. I also cut about 1/2 inch cubes that are great by themselves. Last saturday I slathered the cheese with with honey and gave a little sprinkle of CBP before i cold smoked with cherry for about 2 hours. I did this with cheddar and pepper-jack and really enjoyed. no camera so no pics but give the honey slather a try

    I have only tried cheese once... I am so afraid I will screw it up! LOL, but your honey & cbp idea sounds sooo delicious I am gonna have to buck up and give it a go again!

      I like the idea of glazing with honey.. But does the cheese still get a nice smokey flavor or just the honey??

          sweetens up the cheese a bit but I got good, even smoke into cheese too.

            so do you get sticky cheese or does the honey somehow dry out ? (haven't tried dehydrating honey yet)
            Cheese and honey - sounds a bit weird, but I eat peanut butter with cheese so what's weird :-)

              I just did a light glaze with the honey- put a little on and spread it with fingers til I covered the cheese. It did not come out sticky.
