tried something new last weekend. I usually use a 2 lb cheese block and cut it lengthwise both ways and across the middle to give me 8 cubes about the size of a butter cube. It gets even smoke and slices fit most crackers. I also cut about 1/2 inch cubes that are great by themselves. Last saturday I slathered the cheese with with honey and gave a little sprinkle of CBP before i cold smoked with cherry for about 2 hours. I did this with cheddar and pepper-jack and really enjoyed. no camera so no pics but give the honey slather a try
