  • Not quite an emergency but.

    I've had two shoulders in my fridge that I picked up at Sam's last Saturday. Plan was to smoke them for home and work tonight but rains coming and I lent my easy up out for the weekend. They are in cryovac and fridge temp is about 35 degrees. Will they be okay for another week or should I freeze them?

      relax & do it another time...they vac'd...if ya can't get after it...freeze em...

        Sucks but I would freeze them...Then in about three or four days you can start the thawing process...

          Do they have a sell by date on them? Same thing happened to me with a brisket and it was perfectly fine.

            I was thinking the same as Ryan:

            If the sell-by date is after the date you're gonna smoke them, what's the difference 35° in your fridge or probably higher than 35° in their show case. It's cryo-packed.

            However if the sell-by date is before your smoking date----Freeze it.

              I'd say they are fine - I've had cryo-vac'd pork be just fine in the fridge an extra week.

              You could freeze, if you want, but there's no need to do so, in my opinion. I would cook em and eat 'em.

                Thanks folks. Says best or frozen by 6/20 so I'm good. As it turns out it has hardly rained at all .
