  • 6.5 # Netted Me 3#. Sirloin Jerky

    Started with 6.5# trimmed Sirloin roasts. Used Hi Mt Original mixed with their Hickory. Put CBP on 1/3, Red Pepper flakes on 1/3 and left the rest original. Put in the Big Chief with 1 large pan of Apple chunks and let it go overnight. Pulled the first few thinner pieces after about 10 hours. Checked every couple hours and pulled what I liked. Longest, thick piece took aboot 18 hours. Had to knock off some of the Red Pepper flakes, as I thought they were just too hot to be enjoyable. I did these for a buddy, who likes some heat, as do I, but I got carried away with the Red Pepper flakes.... The CBP was the best IMO, and Hi Mt makes a solid product. IMO, this stuff is as good, or better than you can buy in the meat shops/specialty stores. The "Old Chub" is a Scotch Ale, pretty thick, and strong (8%).... Not my favorite, butt not bad+-

    Heck yeah!! Making your own is way better than the store bought stuff.

                  Scott, that looks wonderful! I use Hi Mtn stuff as well, the Inferno! Just love it.

                  I also need to use some sirloin next time. I always use top round/london broil when it's on sale.

                    Not much on "mixes" but they must be aight. Gotta be betta than store bought. Don't think I've ever turned out a batch the wasn't better than store bought! Some, wasn't as good as others, butt still better than store bought. Even that batch I got kinda heavy with the Smitty's....was still darn good! Butt me likes it hot!
