View Full Version : Sriracha Asian Smoked Wings

Well, I finally got the wing thing figured out thankfully. These are by far the best wings I have ever done and they are very simple to do. It's all in the sauce. They are sweet with a good heat that shows up a tad later.

The sauce is:

1 jar 14 or 18 oz. of Orange Marmalade
1/3 cup of honey
1/3 cup brown sugar
1/3 cup Sriracha Sauce

I smoked at 350 degrees with apple wood for an hour. I also put a mild jalapeno rub on the wings before hand:

After an hour, dip the wings in the sauce and smoke for another 15 minutes. Then, dip and flip them one more time for an additional 15 mins. Then, they're done:

I was lucky enough to find this recipe and wanted to share it. The pictures do not do justice to the taste of these wings. I was also plesantly surprised at the texture of the skin.

Thanks everyone. Please do yourself's a favor and try that sauce. The place I found this also suggested trying peach as well as rasberry in place of the orange. All kinds of possibilities and yet it's a simple and easy sauce to make.

Ken, I think you're right. It would be great on a spatchcocked bird especially.

I put Franks Red Hot on almost everything I eat.
I've got Sriracha and the Hot Garlic Chili Sauce in the fridge at all times, and my man Tony (from the Chinese Restaurant up the street) is kind enough to supply me with his Chili Sauce.

Wow, Pete. I missed this one. This looks fantastic. You guys got me started on the hot stuff. Never was a big fan, but I'm an addict now. Got a jar of raspberry jelly from dad about a week ago. Gotta find me some of this sriracha sauce. Love doing legs on the grill. I'll give it a shot. Thanks.

Thanks guys but I'm just passing the recipe along. They are good so give them a try. It's a sweet heat which really balances things out. Not too much of either after all is said and done.

I haven't had any one say they are too sweet or too hot. The guy who came up with this one knew is stuff.

Just be careful if you make the sauce and dip a chip in it or something. Next thing you know, another chip, and another and no suace left for the bird.

Christ..I'm really having a hard time wrapping my tongue around all that sweet. Like the Sri sauce tho. Might have to play with this... i'm thinking fresh ginger, soy and ground peanut maybe...

When I first ran into this, I kind of thought the same thing and I'm not someone with a sweet tooth, by any stretch. In fact, I kind or run away from sweets.

Rich, all I can say is try it and let others try it. Between the pan and the smoke, it's not as sweet as you think. All I can tell you is that the ones I have served, I have never heard they are too sweet nor have I heard they are too hot. It just makes a really nice combo. Just try them and then if you tweak them, at least you have a baseline.

If you come up with an improvement, please let me/us know as well. Always looking for new ideas. I'll be playing around with the sauce recipe as well but it's hard to beat so far.

abel i bought 15lbs of wings the other night just to try this reciepe out...i have the sirachi and i got the orangle marmalade and brown sugar...so next weekend for the big game....Oklahoma 54 BYU 21 ...i will do these then...pics to follow....

used this recipe on some thighs yesterday. Super. Had about 5 lb of thighs and marinated about 4 hours in zip lock bag with 1/3 cup each soy sauce, lemon juice, oil, and sirancha sauce. Light dust of a no-salt chicken rub (lots of salt in the soy), then smoked til about done and used your marmelade sauce the same as you for the finish. Will do this again for sure. Thanks

They were awesome. Perfect heat,sweet combo. A lil messy, but thats what wings are sposed to be LOL. Did take a couple pics of them on the drum, but they didn't turn out very well in the bright light. Did 6 lbs of them, and the folks who tried them, loved em.

And I missed it, the Rockets took em 54 - 38. Woulda been a heck of a game to see. They're playin Ohio State next weekend, should be a good stress test. Toledo's actually a great place to be for spectator sports. :cool:

BTW, them leftover wings are darn good cold to! :thumb:

Huh...no shit... cool! But honestly... if you never been to a comp... turn in time is tough...and usually breakdown time right after for the big stuff. THEN...tick-tock...the wait for the results.

But man...nice to know! Hopefully I'll be back to my bro's place to watch the third!

Just a little update. Did these last weekend with raspberry instead of the orange. It's a different taste but good. The heat element goes down considerably though which probably had to do with the sugar content in the preserves. There is some heat but after the smoke, it cooks off so you can adjust if need be.

In any event, kids and adults gobbled them down. So, if you want the heat, add more. Aslo, some evicence that it really did happen.

I bet that was really good! Raspberry goes well with spice. i wish I could find the recipe for the raspberry habenero sorbet I made once.

Now I really need to find this sriracha sauce. Still have the raspberry jelly from dad. Bet the marmalade would make a good orange chicken though.

I bought more cherry preserves than needed for the cherry chipotle glaze. Wonder how that would taste? Hmm, the possibillities....

I made this recipe tonight in my MES, and this sauce is the best thing I've had on a wing in forever. I added a splash of sesame seeds to my batch for some color. I wish I had added a touch some 357 or Blairs hot sauce to spice them up a bit more since I like the huge heat rush right after the first bite, but these were great as they were. We'll see what the co-workers say on Monday if any are left.

Did them last weekend again for the games. This time, I used Peach preserves.

Of the 3 flavors I've tried, this was the family winner. Good heat and very tasty as least for the adults.

and all the head chefs on the forum have seemed to tried it and every one else is wanting to.
