With the stuffed Throwdown going on I thought this might be an appropriate post.
This was originally done in 2005 and reposted in 2009.
I have done the potato and corn as a casserole, but I got this idea of how to use it with seafood and the corn husks. I figured it might work like using banana leaves to wrap food in when grilling. So, here's what I came up with.
2 ears of sweetcorn, pulled the husks back, but not off. removed the silk. Put the husks in water to keep them soft til later.
1 ear I cut in half and wrapped in bacon
The other ear, I cut the corn off the cob, and sauted the corn with some diced green onions in 4 tbs of garlic butter til soft ( about 15 min.)
I baked a couple taters, and made mashed taters. I used a little sour cream, cream, shredded Mozzarella cheese, and the sauted corn for the mashed taters.
shrimp-shells removed and de-veined and some bay scallops. I put a scallop inside the curl of each shrimp.
On a piece of plastic wrap, I spread some of the mashed taters, then placed the shrimp and scallops in a row in the taters. Filled between the shrimp with taters, and then put tater over the top. About 1/4" thick around the shrimp.
Now I rolled the mix up in the wrap and formed it kind of like the size of the ear of corn. Hey I made a Potato cob. Then set them in the frig to cool and firm up til ready to cook.
Took the husks out of the water and dried them off. Then removed the plastic wrap and placed the potato cob in the husks.
Folded the husk back in place and tied it off with a couple strands of the husk. Ready for the smoker.
I had the drum temp. smoking along at around 350°. I wanted this to be a fast cook, so as not to turn the shrimp and scallops into hunks of rubber.
About half way done.
I put the bacon wrapped corn on about 30 minutes before the husks.
And this is what I ended up with. Seafood & tater stuffed husks with a creamy garlic sauce, bacon wrapped corn, and some fresh berries with sweetened cream.
Well, the boss said she really liked it. So, I guess it was a success.
