  • Ham Hocks vs neck bones

    Was going to try the Smokey refried beans that Rsands posted a while back but the only ham hochs I can find are smoked/already cooked. The only salt pork I can get is sliced. And the best fresh bone-in substitute I can find is neck bones. Can also get thom smoked...

    Are the neck bones gonna serve the same purpose as the hocks? I figure that its only to flavor the beans and maybe add some fat too. The necks dont appear to be very fatty. Whadda ya think?

      Neck bones are just as good for flavor.. Just a bit more meat on the hocks..

        or get you some spares and trim st louis style and smoke the trimmings and use them in the beans if you can keep from not snacking on them...
