    Yeah I know I said I'd never do it, but it was the only way due to time. Dropped in bath at 129 Friday morning, pulled out 12 hours later. Cold shocked in ice water, then fridged overnight. Seasoned with tatonka dust. Smoked at about 225 on the kettle and vortex with hickory and cherry until back up to 129.

                      When the come oot of the bath, they aren't real purty... until you put some fire to them and get that char. I love cooking this way... nice job Mike!!

                        Thanks everyone! It was a great lunch. I can see myself doing a side by side comparison to a fully smoked one in the near future. Great texture and flavor. Got a great bark and smoke flavor from the kettle and vortex. Got a couple corned beefs on smoker right now with same method.
