  • Batch of cheese for a friend

    Cooler temps = Cold smoke,, Had a friend stop by the other day and asked if I would smoke her some cheese,,, Well here is her batch,, smoked for about 6hrs I was going for color on this one and not time, I usually smoke for about 3hrs or so,,,I guess we will see how it goes in about 2 weeks or so.

        Yeah...smoked gouda!! I'd arm wrestle ya for the last slice of that. The color on all of it looks great. Good to see that you didn't take Rich's suggested temperature of 582° Kelvin.

                  Thanks,,,, They are called Lil Devils, found them at local hardware store that sells pellet grills.

                    Haven't tasted it yet, vac packed them last night and threw them in the fridge, I will wait two weeks before opening to let the smoke mellow out.

                      If I'm not mistaken, Lil Devil Pellets are a blend with alder as the primary component. 70 - 75% alder make them less expensive to produce. If this is indeed still the case, try using pure flavor wood pellets for smoking cheeses for the better, more controllable, results.

                      If you are using and A-MAZE-N smoker tray, smoking cheeses over pure flavor wood sawdust will produce a lighter smoke, will not discolor the cheese, and may be enjoyed right away. No mellowing required. Plan on cheeses over sawdust for 6-12 hours depending on your preference. No mellowing required.

                        Thanks for the tip,,, Yep Lil Devils are less, but I am trying to use them up, I did a 2nd batch over the weekend, using BBQ Delight Orange pellets, Never used a citrus pellet before can't wait to taste the results, also, I smoked that batch for 8hrs,,, I am using the MES 30 with the Mailbox Mod, and the amps, so far so good,,,,I will still like to have mine mellow for a while,
