    Does anyone SV summer sausage to get it up to temp after smoking?

      I've done it works great. Cooks alot faster. I like it cause it all cooks evenly. In my fridge smoker the bottom could be 150 but top is 140 then I'd have to flip them. This way into the water and its all the same temp.

          ?? Really??

          So let me wrap my head around this. smoker at 100 for an hour or so no smoke , smoke for a couple of hours up to 120 and finish off in a "warm" water bath to 153?

          Then a cold water bath to bloom?

          How long in the warm water??

          How do you measure internal temp while in vac bag?

            I don't use a vac bag. I can't say for sure how long it takes but its a lot quicker. I'd have to go find my notes. I set temp at 160. Can't tell a difference in the finished product.

              Thanks Ryan. Will try next time. After you take out of water and bloom, do the casings shrink tight again or do you remove them?

                  I did the SV thing today. Worked as Ryan said. I had summer sausage and trail bologna in smoke for about 4 hrs and only up to 120*. Into the SV at 155 and 3 hrs later, Done. Texture fine and casings tightened up nice after cooling.

                    Thanks for the reply Don. I smoked some SS today and got it a little too warm too fast (was limited on time) and had a little more fat render oot than normal. I think I need a SV machine for my Christmas present to me
