  • Homemade Holiday Gifts

    The beginnings of 1 gallon Limoncello and 1 gallon Arancello (orange).

    This recipe uses 190 proof grain alcohol and will finish at 70 or 80 proof. The good stuff

    Bottle #1 contains the zest of 30 lemons and two 750ml bottles 190 Everclear.
    Bottle #2 contains the zest of 30 oranges and two 750ml bottles 190 Everclear.

    They will rest for a few weeks before straining and filling the infusion bottles with simple syrup. They will then rest another week or so before filtering several times, bottling, and labeling.

    They will be done in time for the holidays but will continue to improve with age.

                      I considered making a batch of grapefruit but organic limes were on sale. I bought 34 organic limes for $8.00 and so lime it is.

                      I miscalculated the amount these 190 infusions will make. The three I am making (lemon, orange, and lime) will produce 3.75 gallons of finished product at the 70-80 proof level I am shooting for. I had to order more bottles

                      In my search for making the smoothest 190 limoncello possible, I learned there is a liquor filter on the market that filters impurities out of cheap booze making it much smoother tasting. You can buy one of these filters for under $30.00. Everclear falls into this category. Nobody buys grain alcohol to drink straight so the manufacturer doesn't care what it tastes like. It's the impurities that make for the best hangovers. Filter them out and cheap booze will taste more like the expensive stuff.

                      I ran my grain through 6 coffee filters before starting this process. Better, but not the best.

                        The Calcecello is under way.

                        The zest of 40 limes in 1500 ml of filtered 190 proof Everclear. Look at the color already. Liquid emeralds.
