  • Cheese Day.

    Its become a holiday tradition at the Zip household to smoke cheese for christmas presents. I usually do about 10 pounds of the stuff, but this year we decided to double it, due to the requests of the few junkies that actual smoked cheese seems to produce.

    Tried to buy decent cheese, and costco seemed to be a whole lot cheaper than anyone else.

    First batch was mild cheddar, with pecan pellets. smoked them for about 3 hours...



    2nd batch was Mozarella and Gouda, as per the recommendations from you fine people...
    Pulled the mozarella after about an hour, let the gouda stay for a couple more.



    Third batch was colby, Pepper Jack and Sharp Cheddar. I tried apple wood on this, kinda was wondering if a sweeter would might lend itself the the stronger flavors of the pepper jack...





    sealed em up, and threw em in the garage fridge for a month.

    I love this time of year

              I cant get enough of the pepperjack myself...
              And the folks I share with love sharp cheddar...
              So that's all I usually do...
