Yes, I vacuum packed it - after wrapping in foil. It had a best before date on it of "tomorrow".

I don't want to throw out a 20 dollar wheel. waiting to cedar plank it with a grilled mushrooms sauce.

Hmm, depending on the size I would quarter it and vaccupack it.

        Brie is an awesome cheese.

Thats a pretty moist cheese. Personally, I wouldn't freeze it. It never comes out as good as it goes in bro.

Thanks for the comments. I know it'll change texture - which is ok because we'll be melting it on a cedar plank. JUST don't want it to go to waste!

Yeah..no freeze the brie! If properly stored..like you have..it’ll be fine for a good long while. It’s already “soured”

                Do this:

Search google for Cranberry Jalapeno Preserves, and buy it.

Pour it all over that Brie.

Buy some good, thin wheat crisp crackers.

Put a cracker to that mixture, and Sample that.

That Bri will be gone. You won't have to preserve it.

Also, your mouth with have an orgasm.

OK, just for that, I'm sending you a recipe. My wife said it's the least we can do.
