  • Lena and I been busy...Our pantry...

    Well start with the few leftovers that I saved for slicing...I see more BBLT sandwiches in my future...



    Here is 22 pints of my wind sauce. This chit is Hot, even by my standards...


    This is 31 pints of the mild salsa (aka child sauce) for the ladies of the house. Its just right for dipppin chips and drinkin beer...add about 5 pints left from last year and I think I might make it through the year.


    Here are some qts of maters...


    Mo maters...From last year...


    The homemade tomatoe juice... cant do without this stuff....


    Pickles left from last year... Had so many leftovers that we just gave away most of the cukes this year...


    And the final shot shows the "Hot Stuff". Every thing from "The Dark Side" barbecue sauce, to my "Smokin Hot" sauce to the "Next in Line" sauce...Also some pickled Golden bullet Habs and the hottest of all...The "Stupid Sauce" mabe with nothing but Habeneros, salt and vinegar.



    And I wonder why i cant find time to fire up the smoker...

    And Yes I vote for a canning forum...

          Well I just did the math and so far we put up 91 pounds of maters (salsa included). And that dont count all that I can eat. And it aint over yet...

          By the way... this is from 15 plants...

              nice smoke freak..you should eat well and i agree we should have a canning forum....BTW any chance of gettin the reciepe for your wind sauce....

                There is nothing like having a full pantry of all your own favourite preserves. My matters are ust starting to turn colour. I'll be up to my you know what in a couple of weeks.

                  I don't can like I used to but always loved the sight of shelves full of different canned goods. Now I just do tomatoes. Still have enough from last year to get through the winter. Great looking pantry.

                      Man I wish I could do that stuff iin the city here, but stuff dont grow too good in concrete.

                            Looks like you've had a great canning season so far. I love being able to raid the fruit cellar in mid Winter instead of having to use store bought. May not get as much canned this year though 'cause my MIL who helped us has been in the hospital for half the Summer.
                            Your "Wind" and "Stupid" sauces sound like quite the gastronomical adventure.
                            We'll can our 'maters, but I'm helping my BIL do some siding work, so I may end up just freezing and drying my peppers this year.
