    Santa brought a new toy for Christmas, an induction sous-vide!

    This is a really cool tool, it has a smart hub induction plate that can take multiple attachments for things such as sous-vide, griddle, etc.



    Oliso Smart Hub Induction cooker with Sous-Vide water bath. It works great! I love the induction based hub that is very accurate and heats up water extremely fast. So far I have done a sous-vide tri-tip and some chicken breasts. Both turned out amazingly tender and flavorful (though I didn't get any pictures :(.... ) Process was pretty simple to season the meat, throw in some fresh herbs and vacuum seal. Placed in a 140 degree water bath and let it go for about 4 hours. Then pull it and sear it on the grill for about 2 minutes a side on a very high burner. This tool rocks! I can't wait to experiment more with it.... next up will be shrimp for shrimp cocktails!

I find it a useful tool and see the validity as a cooking source for precise temp control, minimizing food shrinkage, infusing flavors and ease of use, let alone providing very tender meats. I can't see it used for everything, but it does has its place. I also like this model with the induction heating base, which can double as an additional place to cook things in inductive pans. Nay-sayers can say whatever they want.... until you try it, you don't really know. This certainly has its place and I am looking forward with more experimentation.
