  • Thai Peanut Chicken - Sous Vide

    On my list of things to do are several Asian inspired dishes I have been wanting to do. I also wanted to take my Sous Vide cooker for another spin so I went with Thai Peanut Chicken Noodle Salad. Cold smoked 4 chicken breasts for 1.5 hours using Alder pellets using my Amaze-N-Tube-Smoker in my Yoder Wichita. Ambient temp outside was 43 degrees. Then seasoned with inion powder, garlic powder, pepper, sea salt and tossed in some rosemary sprigs for extra flavor. Then into the water bath @ 146 F for 3 hours. I followed the water bath up with a hot sear in my CI skillet. The noodles are Linguini with some cucumber, carrots, green onion, green & yellow bell pepper. I made this really tasty Thai Peanut Sauce which I put three ladles over the noodles and saved the rest for the Chicken. I sliced the chicken crossways. Plated up some noodles and sprinkled on some chopped peanuts. Then on went the chicken followed by a liberal amount of Peanut Sauce. On went more chopped peanuts and garnished with parsley. OMG... It was rock solid! The noodles were served room temp and the chicken hot. That's how I like this dish. Thanks for viewing.

    Ingredients:

    Thai Peanut Sauce:
    1 Cup Peanut Butter
    1/2 Cup Soy Sauce
    1/2 Cup Rice Vinegar
    1/2 Cup Water
    2 Tbsp. Sesame oil
    1 1/2 Tbsp. Ginger (Minced)
    4 Cloves Garlic (Minced)
    4 Tbsp. Siracha
    4 Tbsp. Brown Sugar

    Noodles:
    Box of Linguini Noodles
    1/2 Cup Shredded Carrots
    1/2 Cup Shredded Cucumber
    1/2 Cup Sliced Red Bell Pepper
    1/2 Cup Sliced Yellow Bell Pepper
    1 Tbsp. Olive Oil
    Pinch of Salt

    Chicken & Seasoning:
    4 Boneless, Skinless Breasts
    Rosemary (4 Sprigs)
    1/2 Cup sliced Green Onion
    Sea Salt to Taste
    Course Ground Black Pepper to Taste
    Onion Powder to Taste
    Garlic Powder to Taste

    Garnish
    1/2 Cup Finely Chopped Peanuts
    1/2 Cup Chopped Parsley

    What only 4 breast.... you generally do like 40 pounds at a time!!

      You nailed it Rob! I'd love to do this dish, butt I live with folks with peanut intolerance. Damn fine job!

      One question tho, what are "Sinless Breasts" you list in the recipe? My mind wandered with that...
