Jerky'd out...

After exhausting my venison supply late December, making 120# of jerky for people, I have purchased over 170# of top / bottom round for making jerky. Tonite I am finishing up the last of it for an 80 (8oz) bag order for a friend. I need a break. But the money is good.

Started todays batch with 45# raw and got 46, 1/2#bags. Beef averages right at 50%, venison 45-50% pork loin 40-45% yield.

How do you lay out that much in a smoker? I use paper clips to hang each piece so I can fit more in my smoker. I'm still amazed, that's a lot! I do 5lb batches, a snack in comparison to your efforts.

I ran 2 smokers 2 shifts. I lay it out flat on racks. My fridge sm0ker will hold a little over 2# per rack x 4 and the other one will hold 3+ per rack x 6. When first load was about half done, I loaded more racks and set in front of a fan to speed up the process. Started at 7am and finished with all bagged up at around 10pm.

I'll be makin some today, I cut mine quite a bit thinner so I need more room, thus the paperclip method. I'll post some pics.

I cut about 1/4 in average. Some a little heavier.
