      I got this SOME TIME AGO from GOOOSE53
      off a now extinct board.

      HUSHPUPPIES
      GOOOSE53

      4 c. Vegetable oil
      2 c. Yellow cornmeal
      1 c. All-purpose flour
      1 Egg, beaten
      3/4 tsp. Salt
      1/4 tsp. Baking soda
      2 c. Milk
      1 c. Water


      In a cast-iron skillet over medium-high heat, heat vegetable oil to 350° F or until a small amount of batter dropped into the hot oil sizzles and floats. Do not let the oil get too hot or the center of the hushpuppies will not cook thoroughly. In a large mixing bowl, combine cornmeal, flour, egg, salt, baking soda, milk, and water. Mix until batter is smooth and free of any lumps. Batter should be stiff (if batter is too dry, add milk; if batter is too thin, add cornmeal). Using two spoons, push a small amount of batter into hot oil (370° to 380° F). After about 10 seconds, hushpuppies will float to the top and begin to brown. Fry for approximately 5 minutes or until golden brown, turning to brown all sides. Remove from oil and place hushpuppies on paper towels; continue cooking the remaining batter (fry in small batches, adding 4 to 6 hushpuppies to the oil at a time). NOTE: They can be held in a 200° F oven until serving time (approximately 30 minutes). Serve hot. Makes 2 dozen hushpuppies.

        Yield 35

        6 cups peanut oil
        1 1/2 cups self-rising cornmeal
        1/2 cup self-rising flour
        1/2 teaspoon baking soda
        1/2 teaspoon salt
        1 small onion, chopped
        1 cup buttermilk
        1 egg, lightly beaten

        Using a deep pot, preheat oil for frying to 350 degrees F.
        Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hushpuppy is dropped in the oil. Fry until golden brown, turning the hushpuppies during the cooking process

              Thanks for the recipe V. I was just looking for a tried n tru recipe, so I'll go with gooses. I searched google and found all the commercial type ones, but sometimes theres just a little more of this or that in a good ol grandmas recipe that hits the spot...thanks again V

                  For the best hushpuppies, use House of Autry cornmeal. For some reason, it makes the best hushpuppies. It's typically only available in the south, but I would check the local stores anyway.

                  I've used every other cornmeal mix, and there is nothing that compares to House of Autry.

                    I'm healin up. The Mrs. is challenged but she's seeing 2 diff teams of Dr's now, so I'm quite hopeful.

                    However, I've got 18 Dr appts set up for September so far, and more to come so it's rather hectic.

                    I keep wantin to wake up like it's a bad dream. It's life though.
