Been awhile since I smoked some cheese so I figured I'd better do some. 
Picked up some sharp cheddar and pepper jack at Safeway.
Cut it into chunks to increase the surface area available to the smoke.
Also figured this would be a great time to try out my Amaze-n-Pellet smoker.
Filled one row with pellets.
Should be good for 3 to 4 hours from what I have read.
Wow, that thing puts out a lot of smoke.
Cheese on...
and we are smoking.
More later . . . if I still have an Internet connection and power. Supposed to get windy in a few.
Those numbers are peak wind gusts, not temperatures.
