    I love my new job so much!!! It's almost too good to be true. Well, except the pay isn't the best, but LOVE LOVE LOVE the job. Anyway, for tonight's dinner I sous vide a pork chop at 138 for 2 hours then grilled it. For the sides I was experimenting with the fennel for work and it is outstanding!!!! Gosh, the sauce alone was amazing. I highly recommend it, even if you don't sous vide it. It's olive oil, saffron, orange zest, coriander seeds, salt cooked with fennel. That's it. The potatoes were cooked with fresh rosemary, roasted garlic, clarified butter. Seared the Brussel sprouts in the clarified butter. Yay!!!!

                      Thanks so much you guys! Today I took in more samples to my most awesome new boss and one of the items I took was the fennel with olive oil, saffron, orange zest and coriander seeds. It is nerve wreaking while you wait on a chef of that caliber to react to your food and he was beside himself!! He is putting it on the menu. I cried all the way home! So, please, please, please, make this simple dish. Or at least make the sauce, it goes soooo well with pork.
