We celebrated Labor day on Sunday at my youngest's house. My oldest boy had to work Monday. We ground and mixed everything Saturday evening and stuffed Sunday morning.
Since my stuffer isn't fixed yet, we used the grinder. Shot out the Chivapchichi and got those going in the smoker. We didn't make the yogurt sauce, just ate them with breakfast. One rack was sprinkled with Magic Dust, the other, a Weber rub my son had. We used 2 lbs. of our ground venison which is a 66/33 venison/beef mixture and 1 lb. pork. They are fantastic Zeek.
The brats were Keith's (Kingadaroad) recipe.
7lbs pork butt
2lbs xtra clean venison trim (can use veal instead)
1 lb pork back fat
2 cups soy protein concentrate (optional but sure makes them plump)
1Tbs white pepper
1 Tbs mace
1 Tbs nutmeg
1 tsp ginger
4 Tbs salt
3 eggs
1 pint heavy cream
We used 3 lbs. of our ground venison, and I don't think we would have had any problem going closer to 50/50. Used 2 cups of powdered milk instead of the soy protein. May try other things in the future, But I gotta tell ya, these are incredible.
Also showed my son how to make the Magic dusted cheezits. Thay lasted about 10 minutes. Lol. There was a lot of folks, booze and food. I didn't get nearly as many pics as I would have liked. Grilled a dozen brats for folks to enjoy. Several didn't believe us they were homemade, until they saw the bowl full in the fridge to be vac'd. This is definitely a keeper.
