    So, how's the firmness without the brine/cure? Sounds tasty...but the mechanics?

      Not quite as firm as when brined, but it did hold up to being lifted off the rack without breaking apart. I prefer it a little more moist than what I used to get out of a wet/dry brine. Diff strokes.

        Right... and better for ya if sodium is an issue. Thanks Rich- another alternative to the usual is always a good thing.
