Been a while since I contributed. Yesterday as the wife was having a Scentsy (??????) party, I threw this mid grade beauty from our cow into the SV at 135 and went to the bar to get away from a house full of 30 women and 10 kids, and to watch football. It cooked for 12 hours, but I was too cooked when I got home to finish it, so the vac bag went in the fridge til today. Put it back in the SV at 135 for 1.5 hours to heat her back up, then seared in the CI. Used the SV bag drippings for gravy, made some smashed redskins, and some fresh green beans. Man, these SV turn a plain ole cut of meat into something special. Gonna have some grand ole roast beef sammys up til Thursday and Friday's Thanksgiving feasts!
