  • Filet for Christmas!!

    Well the heck with the traditional ham... we are having filet!!

    Got a whole tenderloin and cut it down to some steaks. Here are six we are going with... Got 12 steaks and about a half pound of trim pieces (not pictured).....


    Put them in the S. V. at 125 for about 5 hours seasoned with MHJAB, garlic and season salt and a pad of butter.


    Out of the bath here is what we have.


    Onto the Vortex they go!!


    Dang these are a thing of beauty!!


    Did up some onion straws


    Off the Vortex get finished with a pad of butter while they rest.


    Plated with some roasted potatoes, and grilled Asparagus.


    Cut open for your enjoyment!!
