                        For the first time, I really liked the SV. We like a rare to medium rare steak so I set it at 122 and it went for 6 hours. Perfectly done all the way through. I might bump it up to 125-128 next time. I prefer under done versus over done so started out at the lower temp.

                          Looks awesome. I'm a 130-134 for 6 hours kinda guy, then an immediate 10 minute ice bath, then to the sear. Great job bro!
