  • Garlic Mango Chicken Sausage

    I think the RED HOOK beer got to me last night on my birthday, so I got the "creative" juices flowing & came up with this. I have not tried it yet, so I will post some comments when I grill one up for lunch. I will be giving the rest to my mom, who eats a REALLY low fat diet.

    GARLIC MANGO CHICKEN SAUSAGE

    - 3# Chicken Breasts (About 5-6) Marinated overnight in Italian Dressing & drained
    - 1 Teaspoon Black Pepper
    - 1 Tablespoon BBQ Rub
    - 7 Small Garlic Cloves
    - 1/4 Cup RED HOOK Beer (but any liquid will do, I think)
    - 1 Teaspoon Drive Chives
    - 1/2 Cup Finely Chopped Dried Mango (Or Other Dried Fruit?)
    - 1 Tablespoon Honey

    Double Grind with coarse plate & into Hog & Sheep Casings.

    And I was gonna make some boring old italian sausages this weekend. Guess I better step my game up a little bit. for creativity. Those sausages sound good to me.

          keep us posted buddy... sounds good anyways... red hook rocks... haven't had that in years... not since the brewery up there in Seattle... geez, that was in 2000.... last red hook beer, july 2000... what a shame... ah, the memories... let us know how it turned out...

                I will make these again & if they were intended for anyone else than dear old mom, they would not be getting them!

                They tasted almost exactly like I thought they would, with a good mixture of Mango & Garlic tastes. One thing I did notice was the aroma of both the Mango & Garlic was Awesome. Maybe a little on the dry side for some sausage heads (I only used breasts) but maybe using thighs would change this, if desired. I thought the texture & moistness was just fine.

                They would be great snackatizers in the sheep casing size, just grab one & eat it.

                I would recommend trying this, or something similar. Maybe mom will only get a 1/2 order.....

                        That's exactly what I was thinking. I'm making boring ass brats and now I'm thinking I gotta add blue agave, or something like that.

                            Looks great! To keep them a little more moist, try adding some soy protein concentrate and a bit of ice water (or a bit more icy beer).

                              That's what I was thinking. Or try the oatmeal and more beer or water. Anything to help retain moisture.

                              Looks like a good recipe though. Gonna order the new stuffer gears this weekend, so after hunting, I can make all sorts of stuff during the winter.
