View Full Version : Elk roast Elk ribs and some beans

Hello Everyone

Today i did some elk ribs in my drum smoker it was great i did the ribs 2-2-1 they got a little over done but they were tender and tasted good the roast i did also got a little on the well done side but it tasted good not to dry i also did a couple of fatty's and some of dutches beans
the roast i rubbed it down with mustard and some of downyonder's rib steak seasoning and on the ribs i rubbed with mustard and downyonder's pulled pork rub the fatty i stuffed with onion and mozzeralla cheese
the roast i was gonna pull it at 145 i checked it and the temp was 133 so i figured another 1/2 hour and it would be done well i got busy doing other things and did not get back to it for an hour and a half the temp read 160 it was just a tad over done still tender and nice

Never had elk ribs before, but I'll bet they were good. Love the roasts. Looks like a great meal.

Im with RR, I have never had elk either. It sure looks great though, the ribs are huge, and the roast looks yummy nice ring too! Great smoke Huey, did you hunt the elk?

nice job!!! love that elk especially smoked!!! never tried the elk ribs yet, we pretty much debone ours except for the legs. we cant transport full quarters into the state so take them down in the field. nothing with any backbone ,spinal or brain tissue allowed into minnesota and prob other states inbetween. cwd prevention. might take a saw along with this year and maybe cut them ribs out. yours look pretty darn good and i imagine its gotta be good being its elk!!!:thumb:

the ribs where great this was the first time that i did any wild game ribs i have always heard that they would dry out had to see for myself i will do this again i am really starting to like the drum here is a pic of the elk i got i killed last Sunday it was a 6x6 a nice bull i got around 400 pounds of meat off him so my freezer is full

Good looking stuff. I'll be saving some of the ribs this year, providing we get our elk. Between my wife an I we have 2 buck deer tags, two cow elk tags and a bull elk tag. If we fill all of these, I may need some help eating all of it.:noidea:

Id like to get my hands on that roast. I would slice it nice and thin and plate it with a big ol heap of hash browns and a few peking duck eggs, cover the whole thing with some country gravy. With a cup of black coffey to chase it. Looks real good Salmonclubber.

Nice meal Huey. I've only had Elk ribs once, bbq'd. Quite a treat.
