  • Brunswick Stew with Hot Flour Tortillas

    This Georgia Brunswick Stew recipe belongs to a talented smoking friend named Saiko. I wanted to give it a try... it was tasty!
    He said the stew is served in Q joints in his area. I guess you can use chicken, potatoes, or add a lot of different things to make it your own. I just stayed with his recipe and loved it. :)

    The original recipe calls for

    2 lb. chopped BBQ meat (I used some smoked pork tenderloin)
    2 TBSP of your favorite rub (I used HeadCountry)
    2 28oz cans whole tomatoes, including the juice ( I used my home canned tomatoes)
    2 11oz cans shoepeg corn (I used grilled sweet corn)
    1 1/4 cup ketchup
    1/4 cup cider vinegar
    1/2 cup your favorite BBQ sauce (I used Billy Sim's Hot BBQ sauce)
    2 cups water
    1 tsp black pepper
    2 tsp salt
    1/2 to 1 tsp cayenne
    1 tsp hot sauce ( I used cholula)
    1 stick butter





    I cut the recipe in half and made a small pot full...









    I added the butter and let it simmer all day....

    Then made some fresh flour tortillas to go with it...

    2 cups flour
    1 teaspoon salt
    1 teaspoon baking powder
    mix well then add
    1 Tablespoon of lard or shortening
    mix well then add
    1/2 to 3/4 cup of warm water
    Let it rest for 15 minutes







    I like to roll them out by hand... They usually aren't round, but I do not care. lol





    Store them in a baggie to keep them pliable while making the rest of them.

    I like hot tortillas slathered in butter, then rolled up.

    It had a nice smokey flavor from the pork, and a nice kick of heat from the cayenne, cholupa and hot Q sauce. I liked it and will be making it again!

        I'm knowin that is tastin good just from the ingredients. Then the pics come in play! Miss Jeanie....ya done nice!

          Holey carp! That looks like a great meal for a nice crisp fall day.
          I like them tortillas grilled, buttered and with a touch of honey. But I can't eat more than one. Diabetes just won't allow it.

            Hell, that would fed my family right nice... Thanks...

            Only here in Ks we would probably grill some bread kinda crispy stead of the tortillias...

              Thanks for the recipe. It is getting that time of year for those dishes, but then again thats the only thing I look forward to when the weather get's nasty. Looked great.

                    looks good. my family always used 3 meats pork, beef, and chicken. i think you would love a few baby limas in it also. takes me back to when i was a little kid at the family reunion

                          Thanks folks! I loved the flavor of the stew, I bet you could use any leftover smoked meat... even sliced smoked sausage would be nice.
                          Not sure if it would be authentic, lol but I bet it would be tasty.
