  • Chicken Sausage with Basil n Maters

    Way behind in the gettin after it gig!.....Sausage me n Louie did today!







    Did patties layerd in wax paper....will vac seal when froze. My granddaughter prefers patties. Rest is in, small links for my Louie!

    Heres what in the mix....I tweaked it some.

    Ingredients
    5 pounds boneless chicken thighs
    1 1/2 ounces kosher salt
    1 teaspoon freshly ground black pepper
    1 1/2 teaspoons minced garlic
    4 tablespoons tightly packed chopped fresh basil
    1/2 cup fresh diced Roma tomatoes
    1/4 cup diced sun-dried tomatoes
    1/4 cup red wine vinegar, chilled
    1/4 cup extra virgin olive oil
    1/4 cup dry red wine, chilled (ain't happenin....Louie said Lambrusco!)

                            like the look of that recipe - might try it with lean pork as decent chicken is quite pricey.

                            Looks like great flavours.

                              Wait a minute. Chicken is higher than lean pork? Around here, chicken and eggs are the "give away" to get you into the store. Weird.
