    Tom,
    This is such a WINNER!!! I did 12 drummies, there was zero left... ZERO!!

    Deboning them was really easy, I was surprised. Washing them is important because of the splinters of bone after you whack it with a clever... that was the scariest part!

    So I stuffed these with celery, carrot, onion, crimini mushrooms & pancetta chopped fine sauted in butter. Let that cool to room temp, then mixed it with Ivernia (very sharp Irish hard cheese)



    Stuffed and closed the ends with toothpicks... cooking twine disappears fast around this house..



    Made a rub with black sea salt, turbinado, oregano, fennel & white pepper



    made a glaze with sherry, fresh orange juice, orange zest & sherry wine jelly



    here they go on the bbq... with some curried mayo, parmesean cheese corn



    done...


    sliced.... These were so awesome! thanks Gunny!!

    I GOTTA try this one, just not sure about de-boning a drum, maybe on thighs?

          Seriously, it was a piece of cake. for the most part you can just pull the meat back, the side of the drummie that has that little bone that sharp one, it sticks there. just take a sharp knife and cut through then I pulled all the meat down, some places you have to shave the meat off the bone as you basically turn them inside out... then whack the bone leaving that joint at the end... easy! really!! I did 12 and it took me 30 minutes!

              outstanding!!!! I use a very similar glaze on my hams.I love it and will now try on other thingsPoints for this awesome meal....

                  Very nice. That stuffing looks amazing.
                  They are really great when entertaining. People are amazed they can eat almost a whole drummy with out a huge bone left over.

                        Gunny, I had to laugh cuz Cabana boy was eating one that was not sliced, he picked it up like a drumstix and was eating it like one (around the bone) LMAO, duh there is no bone in there Tim! OH... LOL! These are great finger food or main dish fare... yummy!

                            Excellent Job Kelly. I just bought a big pack of drums, separated into 4 packs and froze. So I will be trying this myself.
