  • 33 lbs of belly....

    Well it's that time of year again. I just put 33 pounds of pork belly into salt, sugar and cure.

    I am hoping to cure for 7 days, and cold smoke next Thursday right after work for about 8 hrs. Hoping that I can take some on our last camping trip of the year.

                  Looking good Andy! It is that time of year. I just bought 4 bellies that will be shipped this week. Look forward to the finish.

                    wow when andy smokes, he smokes, 200 lb batches a sausage, 30 some pound batch a bacon!!! sheesh!!! cant wait to see the finally, have a hunch gonna have to pull the points trigger on this one!

                      Thanks everyone for the great comments. I just rinsed them off and will be going into the "Outhouse" for an 8 hr cold smoke in the morning. But you all might have to wait until Monday for the pics of the finished bacon. As soon as I package it, we are leaving for our camping trip.

                        Belly's went in at 6 am this morning into smoke house. Man, Either I am way out of tune with the smokehouse or the pouring rain is causeing some issues.
                        It hasn't stopped raining since I tried to start the fire around 5:30 this morning.
