  • Alder smoked salmon

    Had a 2.75 lb salmon filet to smoke today. Seasoned it with evoo, dill and lemon pepper. It was a windy day today and yet the smoker wanted to stay at 250 for some reason. I wanted to smoke at a lower temp but it didn't happen. Using alder that I got from desertlites in exchange for apple.







    Kids loved it, hubby says he prefers oak smoked salmon. Oh well.

        Alder is nice, however since we have an endless supply of oak. It has it's own flavor & I kinda prefer it. The fish looks great!

            Looks good dawn. If you can get them temps down to 120-140 for a couple hrs, and then 160-180 for the last 45 minutes to an hr, you would be very suprised in the difference of smoke taste and texture. If you dry rub or wet brine before for 4-8 hrs, you will get some great results too. Maybe that would make Dan a bit more appreciative!

            Now if he would go and catch some fresh salmon, then it would be even better!

                Great job on the Salmon Dawn. Love that deep color. And btw, tell the hubby to cook his own food.

                        It looks delicious Dawn, nice and moist and the rub sounds perfect. I can't smoke with Alder tho, the man child everytime I have tried it, no matter if its beef, pork, or fish.. so no Alder here.. :( at least for a couple of more years!

                          Great looking salmon Dawn, alder is the only wood I use on fish. It's my choice because it doesn't seem to be overbearing, even if I use more chunks than needed. Ask your husband if he would like his own bottle of liquid smoke...
