I smoked a prime rib this weekend and some twice baked potatoes..
I rubbed the roast with olive oil and seasoned it with cracked black pepper, kosher salt and a bit of garlic....
I smoked with some hickory ...
Added my twice baked potatoes for the last 30 to 45 minutes...
I pulled the roast off at an internal temperature of 137, wrapped and let it rest for 25 minutes...
The rib roast, au jus sauce, twice baked potato, salad and peaches...
It came out pretty tasty. :)
