  • Chicken Fried Smoked Loin Chops

    Last night's dinner was some of the smoked loin chops I made for my brother. He gave me some. Pulled them out of the freezer with the intentions of grilling. Still raining, so change of plans. Thought I'd try a twist on Cowgirl's chicken fried CB.

    Egg bath, dredged through flour and fried in bacon grease. Drizzled with black raspberry sriracha sauce. Wow. Never thought it would be better than on the grill.

    If you've never made smoked chops before, you're missing out. Think they paid 1.58/lb. at Sam's for the loins. Sam's sells smoked chops. For 5.99/lb.!

    Was going to use some apple/pear jelly I got from dad, but the raspberry was already made. Next time. Give it a try. Thanks for checking it out.

          Smoked chops are great! Try curing them first as well... maybe 6 or so hours is long enough. MMMM!

            Yeah, even better. Didn't cure the first ones I made. These were in a brine overnite. Plan on calling the SIL to see what she put in it for the next ones made. Man they're good.

                  Great Idea!

                  My wife makes a fine chicken fried tenderloin. Thats what she calls it anyways. Hammered flat, chicken fried between the buns, add mustard and pickle and let her rip. A nice cold smoke would go well before she gets her hands on the next one...
