    OK..... This all started out as me not being able to find the MACE spice for many Bratwurst recipes I was considering anywhere in my area...... Gunny (Tom) was so kind as to send me some, along with his recipe for Bratwurst...
    We laughed though, because his recipe did not include MACE??

    What a guy though..... Thanks Tom!..... You are a very valuable part of this machine......... And your experience, expertise & videos are surely appreciated.....

    AnyWHO..... I followed Gunslinger's Bratwurst recipe to the "T" with the exception of using more lean Pork cuts...... I would guess about 90%+?- lean or so..... Forgot to get Hog casings for the remainder of the stuffing, so I sent the rest into Sheep casings and the remaining mixture was pan fried & put into the fridge for breakfast... It was really good..... I have yet to have one off the grill, but no bigeee..... I will just make it for breakfast sausage, it is soooooo good.... Thanks Tom!

        Oh heck yeah Scott! Damn good looking sausages bud. If I was making sausages for a few hours, Mickey Mouse woulda been that blurry to me too...lol
        I like mine poached in beer 'n onions, then grilled slightly blackened! Oh yeah, I will need a bib too. Killer sausage slam!

                      Ok here it is..... I had a couple of the Sheep stuffed links for breakfast & they Rock!: sausage:..... I put all seasonings in a coffee grinder and ground them up to fine texture.


                      Gunslinger's Bratwurst

                      - 5 lbs Pork Butt
                      - 1 cup ice water
                      - 2 Tbs Kosher of Sea Sale
                      - 1 Tbs Sugar
                      - 1 Tsp GroundCoriander
                      - 1 Tsp Ground Sage
                      - 1 Tsp Paprika
                      - 1 Tsp Ground Red Pepper
                      - 2 Tsp Ground Rosemary
                      - 1 Tsp MSG (Optional, but use if not intolerant)
                      - 1 Tbs Dry Mustard
                      - 1 Tbs Ground Black Pepper
                      - 1/8 Tsp Ground Nutmeg
                      - 1 Pinch Ground Cloves

                      Mix all spices into ice water and place in freezer while cubing pork. Pour spiced water over cubed pork and mix well. Grind through coarse or medium plate and mix well again. Stuff into hog casings, twist into link length of choice.

                        Scott, back when I drank beer, I poached them brats in a can of beer, about the same amount of kraut juice and onion on a covered grill till done. Then crisp them up a bit on the grill.
                        Now it's just the kraut juice and onion. I gotta try that beer extract powder some day.

                            Scott I forgot to tell you, that recipe originally had mace in it. I got rid of it because it really didn't need it.
