  • orange sponge cookies :-)

So I recently bought a cookie press to use as a jerky shooter.

The jerky plate is off being modified slightly so it gives me two strips of jerky at once.

So just for a laugh i thought i'd make some cookies with it.

    The dough recipe

    3oz softened butter
    4 oz sugar
    1 egg, beaten
41/2 oz self raising flour (or all purpose with however much baking powder you'd need - I always use self raising so can't help lol)
    1 tsp vanilla essence
very finely grated zest of 1/2 orange (I used a whole orange and it's probably a bit strong)

beat the butter sugar and orange zest till it's smooth and light yellow.
Mix in the beaten egg and beat till it's smooth.
mix in the flour and beat till the mix is stiff.

Use a sheet of greaseproof paper or a non-stick baking sheet and either use a cookie press or drop teaspoonfuls of mix evenly spaced onto the sheet.

    Cook towards the top of a pre-heated oven at 400f (gas mark 6, 200c) for 6 1/2 - 7 mins.
Cookies are done when they start to go brown. keep an eye on them the difference between cooked and burnt is about 40 seconds !!

These will be a light cookie that is slightly crunchy or chewy on the outside and light and fluffy on the inside. Moreish on an epic scale lol.
This amount of mix makes a fair few cookies.
As soon as they are cool (few minutes) store in an airtight container. These will go soggy if left out fairly quickly.
This lot are off with me to tai-chi tonight :-)

Have to admit I'm pretty impressed with how evenly and professional looking these turned out. Hopefully I can use the gadget it for jerky fairly soon as well lol

I like the looks and sounds of them Alex. Orange zest...mmmm
It would be nice to have some Tai Chi classes here too, that aren't in the middle of the day. I would be game for that too
