  • brine time on a turkey

    What is the basic brine time on a turkey say 12 to 16 pounds not sure yet. Also would lemon pepper, garlic, itailan seasoning be ok. Maybe some oldbay. Also how would one taste being bbq.

    Any tips or ideas I am going to smoke on on the 14 for a early thanksgiving dinner where having for family.

    Use the 1cup Kosher/Gal water basic brine, about 8 hours on a 12 to maybe 10 on a 16.

    Your choice on seasoning, but make it stiff with it. It is an inefficient transfer to the bird due to skin/fat.

    I use thyme, onion, parsley, bay leaf and rosemary usually.

      Also, simmer a brine concentrate--perhaps half the water and all of everything else...for a few min... then add remaing water as ice cubes to chill quick. A couple cups of dry white wine helps to dissolve into the solution the essential oils of the spices as well...AFTER the brine has cooled...as otherwise the alcohol will evap before it can do it's work.

        if its a processed turkey, i also soak for a couple daze, changing the water every 8-12 hours, just to try and remove as much of the added crap the processors put in it. all my poultry is brined over nite, prob 12 hours. But thats me, everyone has their own taste.


        let us not cry because we lost someone, but let us smile because we enjoyed their company for what time was allowed us!

          Turkey's are fantastic smoked or bbq'd...... I have the recipe for a Turkey brine somewhere that came with my Little Chief smoker about 30 years ago that is outstanding, just can't find it right now. I will look.
