  • Turkey- maybe some freezer burn

    Got a great deal on after thanksgiving turkeys last year and pulled the last one out of the freezer. It has been brined for 36 hours in a 1 1/4 cup salt to 2 gallons water ratio brine. You can see the skin has darkened where it was exposed to the plastic wrap. Hope the flavor wasn't harmed. I know 11+ months is probabaly too long in the freezer but we're gonna give it a go.

                I don't know. I have a bit of a low salt concentration. The turkey was not salty at all. I can't see the brine completely penetrating that big bird in 8 to 12 hours. The breast alone is 4 to 5 inches thick.

                It turned out great.

                    No sauce needed. It turned out perfect. Made a glaze from some apple cranberry chutney.
