    .....a really good smoked chicken salad recipe you'd like to share?
    So I have some chicken breasts I need to get rid of and my chicken salad is, well, let's just say it could use some attention.
    Anybody have a really good one?

    Hey Gunny, Not really a recipe but I usually just dice up some onion, celery, and peppers and mix it with some mayo, basil, salt & pepper and a little grated cheese.

      Here are a couple that I use.

      Chicken Mac Salad
      8 ounces boneless, skinless chicken breasts, poached and cubed
      8 ounces pasta, cooked, drained and cooled
      1/2 cup diced celery
      1/2 small can olives (black or stuffed green)
      1/4 cup chopped green onions
      1/2 green pepper, cut into small pieces
      ***Dressing***
      1 cup mayonnaise
      1 teaspoon mustard
      1 teaspoon sugar
      1 teaspoon salt
      Combine mayo, mustard, ketchup, dressing mix, and milk and stir until smooth. Fold this mixture carefully over the rest of the ingredients. It looks like a lot of dressing but the macaroni really absorbs it.

      2. This salad is good hot or cold

      Chicken Salad Sandwich
      3 ounces cooked chicken
      1 pinch salt
      1 pinch white pepper
      1 green onion, thinly sliced
      1/4 stalk celery, finely chopped
      2 olive, finely chopped
      1 dash lemon juice or cider vinegar
      2 tablespoons mayonnaise or salad dressin, to taste
      2 slices bread
      iceberg or leaf lettuce
      Chop chicken coarsely.

      2. Add remaining ingredients. Mix to blend. Refrigerate and remove small amounts of filling as necessary for production.

      3. Assemble filling, bread, and lettuce.

        Keep ours perty simple:

        Chop up the smoked leftover chicken
        Add Miracle Whip
        Chopped celery
        some very fine onions (momma finds an onion, I'm in trouble!)
        a bit of Old Bay seasonin to taste.

          This is a recipe that I found for the wife a couple years back and she really likes it. Sometimes I'll leave the cranberries out and add red or green grape halves. Been thinking about trying it with Mandarin orange segments instead of the cranberries too. Hmmmm, maybe if I have any leftover smoed turkey after Turkey Day I'll make some salad with the cranberries and orange segments. She really oughtta like that one. I prefer mine more along the lines of Tips recipe though so I usually make two different batches when I make it.

          Chicken Salad With Apples and Cranberries

          3 cups diced cooked chicken
          1/4 cup dried cranberries
          1/2 cup diced celery
          2 to 3 tablespoons finely chopped red onion
          1/2 cup diced apple
          1/4 cup chopped walnuts or pecans, optional
          4 to 6 tablespoons mayonnaise
          2 teaspoons lemon juice
          1/8 teaspoon curry powder, or to taste, optional
          1/4 teaspoon salt, or to taste
          1/8 teaspoon ground black pepper
          lettuce leaves

          Combine the chicken, cranberries, celery, onion, apple, and walnuts, if using.
          In a cup or small bowl combine 4 tablespoons of mayonnaise. the lemon juice, curry powder, if using, and salt and pepper. Stir into the chicken, adding more mayonnaise as needed and for taste. Line bread or rolls with lettuce and spread chicken salad on the bread or serve the chicken salad on lettuce-lined plates.
          Serves 4.

            salad ?

            best use for smoked chicken breast.
            two slices of bread, little butter on each slice. cover one slice with chicken, sprinkle a little salt on the chicken (oh yeah) add ketchup (optional) put the other slice on top and eat :-)
            For a chicken salad sandwich - add a lettuce leaf to the above.

                Gunslinger I know you can do this also and or looking for a family recipe. I normally do mine like every one else is posting. but, since the puter and google I go here and try differnt ones and let the kids look to see what one they will munch down and like. the 1st one looks pretty good. and I have always thought making it was like dressing for a byrd. all the veggies in the fridg get used. and I like peacans chopped in mine. and stuufed in pita bread pockets.

                  I do the same thing, BUT......... I like to ask here. Judging by the post here, be it smoked, grilled, fried, etc. the palates of the majority of users here seem to be somewhat refined. So you alls opinions matter.

                    OK I don't have the recipe but it was really good on a sandwich. I ordered this at a diner on pumpernickle. It is your basic chicken, onions, celery, and some sort of dressing and seasoning, but what was really good about it, it had chopped nuts ( probobly walnuts, but hickory would be better) and sliced green grapes.

                      i do.

                      whole chix brreast fine chopped or shredded(1lb worth)
                      2 hard boiled fine chopped eggs
                      shake of salt & pepper
                      tsp of garlic & onion pwdr or onion fine chopped
                      dash of paprika(sprinkled over top of salad & let sit overnight-plastic covered)
                      dash of sage or comino-to taste
                      1/4 tsp ground dill & 1/4 tsp ground celery or celery salt
                      1905 brown mustard & real mayo to consistency

                      note- anything pwdr or seed spice can be substituted w/ diced or chopped real- just let meld overnight.

                      granted this is skeet or pecan smoked bird. something like hickory or fruitwood smoke will be sweeter....

                        Here are a few that use turkey, you can just use your smoked chicken.

                        HOT TURKEY SALAD
                        1 c Mayonnaise
                        2 tb Lemon juice
                        1/2 ts Salt
                        2 tb Grated onion
                        2 c Cooked turkey
                        2 c Chopped celery
                        1/2 c Sliced almonds
                        1/2 c Grated sharp Cheddar cheese
                        Crushed potato chips

                        1. In a large mixing bowl, blend all ingredients together, except the 1/2
                        cup
                        grated cheese and crushed potato chips.
                        2. Place turkey mixture in a shallow, heat-resistant, non- metallic 8-inch
                        square baking dish. Sprinkle top with grated cheese and potato chips.
                        3. Heat, uncovered, in Microwave Oven 6 minutes or until cheese melts.




                        Wild Rice Turkey Salad


                        1/2 cup Wild rice
                        1 1/2 cup Water
                        2 cup Turkey; cooked chopped
                        1 cup Celery; chopped
                        1/2 cup Sweet red pepper; Chopped
                        1/3 cup Raisins
                        1 Apple; chopped
                        1/4 cup Green onions; chopped
                        1/4 cup Olive oil
                        2 Tbs. Red or white wine vinegar
                        1/4 tsp. Black pepper
                        1/4 tsp. Ground nutmeg
                        2 Tbs. Fresh parsley leaves, chopped
                        Chopped pecans; for garnish

                        Cook the rice in the water until tender, about 50 minutes. Cut the turkey into bite-size pieces. Combine all the ingredients in a bowl and toss. Cover and chill until ready to serve. Sprinkle on the pecans just b


                        Wild Turkey Dip

                        2 cups cooked chopped wild turkey meat
                        1 container sour cream 16 oz.
                        8 oz. Cream cheese softened
                        2 cups shredded cheese of your choice, I prefer cheddar
                        1 cup mayonnaise
                        2 pkts. dry French onion soup mix
                        Blend everything in a medium bowl, chill to blend flavors, stir again before using. Serve with corn or potato chips.

                          Smoked Chicken soft tacos

                          I use this same recipe for my grilled fish soft tacos(halibut is my fave but salmon works too);

                          Chop smoked chic
                          shredded cabage(cole slaw is good too)
                          shredded pepperjack
                          your favorite salsa
                          avocado slices
                          your favorite hot sauce
                          lightly grilled flour tortillas

                          When I feed these to people they go nuts.
