  • Deer season :{)

    Just finished boning out 2 hinds of a rather chubby doe and a small front from a spiker. Totals 9 Lbs jerky quality stuff, and 12 Lbs sausage fodder, all clean as I could get it. Have another front- thinking on trying to debone so's I can tie up a roast. Wanna lard it with fatback and do a bacon wrap for the smoker. I think the guy will like that. Will get some pix of the project.

    LOVE deer season!

            Can't get a roast from the shoulders of a Texas doe. You must have some bigger ones up there. You got bigger than German Shepard size?

                The MI whitetail is definately larger than the southern deer. The doe the guy took was 175 field dressed he said. Prolly took 4 Lbs fat off each haunch during trimming- and it came skinned.

                  I just got back last night and another unsucessful hunt for me. But when I passed through town to pick up work on the way, the manager there got two deer so I said to him; we need to talk jerky cause I made some for him last year and we just split the products as payment.

                    ALWAYS a good trade there... I don't usually do that unless it's a smaller amount, well like this one really. I'm the only one who eats it, and I just end up giving alot of it away. Ah well. He wants all the jerky, but I'll probably keep one of the logs of Summer :{)
